Ingredients
  

  • 3 cups romaine lettuce chopped
  • 2 cups iceberg lettuce chopped
  • 1 cup red cabbage shredded
  • 1 cup cooked rotisserie chicken shredded
  • 1/2 cup shredded carrots
  • 3 green onions thinly sliced
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup slivered almonds toasted preferred
  • 1/4 cup crispy wonton strips
  • 1 tbsp sesame seeds
  • 1/4 tsp crushed red pepper flakes
  • 3 tbsp rice vinegar for dressing
  • 2 tbsp soy sauce for dressing
  • 1 tbsp toasted sesame oil for dressing
  • 1 tbsp honey for dressing
  • 1 tsp fresh ginger grated, for dressing
  • 1 clove garlic minced, for dressing
  • 2 tbsp neutral oil avocado or vegetable oil, for dressing

Equipment

  • Large salad bowl
  • Mason jar or small bowl for dressing
  • Cutting board
  • Sharp knife

Method
 

  1. Combine all dressing ingredients in a jar. Shake well and let sit for 10 minutes to allow flavors to meld.
  2. Place shredded rotisserie chicken in a large salad bowl. Pour half the dressing over the chicken, toss to coat, and let sit for 10 minutes.
  3. Add romaine, iceberg lettuce, red cabbage, shredded carrots, green onions, and cilantro to the bowl. Toss gently to combine.
  4. Drizzle remaining dressing over the salad and toss again. Taste and adjust seasoning with salt and pepper.
  5. Top with crushed red pepper flakes, sesame seeds, slivered almonds, and crispy wonton strips. Serve immediately.

Notes

Store components separately in airtight containers for meal prep. Add dressing and crunchy toppings just before serving. Dressing keeps for up to 3 days in the fridge. Omit fresh garlic and ginger from the dressing if storing longer than 3 days.
