Ingredients
  

  • 1 serving frozen chicken nuggets Just Bare or any brand, air-fried until crispy
  • 1 cup cottage cheese Good Culture or any brand, full-fat small curd preferred
  • 0.25 cup marinara sauce Rao's or any brand
  • 0.25 cup part-skim shredded mozzarella
  • 0.5 tsp Italian seasoning or to taste
  • 0.25 tsp garlic powder or to taste

  • Air fryer
  • Sharp knife

Method
 

  1. Add the cottage cheese, marinara sauce, shredded mozzarella, Italian seasoning, and garlic powder to a microwave-safe bowl. Stir to combine evenly.
  2. Microwave on high for 1 minute, stopping to stir halfway through. The mixture should be warm and slightly melted.
  3. Cut the air-fried chicken nuggets into small bite-sized pieces.
  4. Stir the chicken pieces into the warm bowl and microwave on high for 30 seconds, or until the mozzarella is fully melted. Do not overheat or the cheese will turn rubbery.
  5. Serve immediately, topped with extra parmesan or fresh basil if desired.

Notes

Let cottage cheese sit at room temperature for 10 minutes before using to prevent curdling. Check chicken nuggets 1 to 2 minutes early when air frying as appliances vary. Store components separately for meal prep and assemble fresh. Do not freeze the assembled bowl.
