Ingredients
  

  • 1.5 lbs chicken tenders trimmed and ready to use
  • 1 cup plain Greek yogurt or mayonnaise; full-fat recommended
  • 1 packet ranch seasoning mix 1 oz packet
  • 1 cup shredded cheddar cheese freshly shredded preferred
  • 0.5 cup grated Parmesan cheese freshly grated for best results
  • 0.5 cup crushed Ritz crackers or panko breadcrumbs; crush finely
  • 0.5 tsp garlic powder
  • 0.25 tsp paprika smoked paprika recommended
  • 0.25 tsp black pepper
  • cooking spray or olive oil for greasing pan and topping tenders

Method
 

  1. Preheat your oven to 375°F. Line a baking sheet with parchment paper or lightly coat with cooking spray.
  2. In a medium bowl, stir together the Greek yogurt and ranch seasoning mix until fully smooth and combined.
  3. In a separate bowl, mix the shredded cheddar, Parmesan, crushed Ritz crackers, garlic powder, paprika, and black pepper until evenly combined.
  4. Dip each chicken tender into the yogurt mixture to fully coat, then press firmly into the cheese and cracker mixture. Avoid overly thick coating so the crust crisps evenly.
  5. Arrange coated tenders on the prepared baking sheet with space between each one. Lightly spray the tops with cooking spray.
  6. Bake for 25 to 30 minutes, flipping halfway through, until the crust is deep golden and the internal temperature reads 165°F. Rest for 3 minutes before serving.

Notes

Use freshly shredded cheese for best melting and texture. Full-fat Greek yogurt gives the creamiest coating. Space tenders well on the pan for even crisping. Air fryer option: cook at 375°F for 12 to 15 minutes, flipping once. Store leftovers up to 3 days in the fridge and reheat in oven or air fryer for best texture.
