Ingredients
  

  • 2 boneless skinless chicken breasts pounded to even thickness if large
  • 3 tbsp hot honey or regular honey with red pepper flakes
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 0.33 cup crumbled feta cheese from a block for best texture
  • 1 tsp fresh thyme or rosemary optional garnish
  • salt and black pepper to taste

Method
 

  1. Season both sides of the chicken breasts with salt, pepper, garlic powder, and smoked paprika. Let rest at room temperature for 10 to 15 minutes.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Sear chicken for 4 to 5 minutes per side until deep golden brown and cooked through to an internal temperature of 165 degrees F. Remove and set aside.
  3. Reduce heat to medium-low. Add butter to the same skillet and let melt, then stir in the hot honey, scraping up any browned bits. Simmer for 2 to 3 minutes until slightly thickened.
  4. Return the chicken to the skillet and spoon the glaze over each piece. Cook together for 2 to 3 minutes to absorb the flavors.
  5. Transfer to a serving plate, drizzle with remaining glaze, and top with crumbled feta and fresh herbs. Serve immediately.

Notes

Use block feta and crumble it yourself for the best texture. Let the chicken rest before cooking for juicier results. Store extra glaze separately for fresher reheating.
