  • 2 lbs boneless skinless chicken breast cut into 1 to 2 inch chunks
  • 1 tbsp olive oil
  • 1 tbsp chicken base paste-style bouillon
  • 1 tsp paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp black pepper
  • 0.25 tsp dried thyme
  • 1 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 400°F.
  2. Cut the chicken breasts into bite-sized chunks, about 1 to 2 inches each. Keep pieces as uniform as possible for even cooking.
  3. Place the chicken pieces into a 9x13 inch baking dish. Drizzle the olive oil and chicken base over the top, then toss until every piece is coated.
  4. Sprinkle all the spices over the chicken and toss again until each piece is well seasoned. Spread into a single even layer without crowding.
  5. Bake for 15 to 20 minutes, or until the internal temperature reaches 165°F on an instant-read thermometer.
  6. Remove from the oven and let rest for 5 minutes. Toss with freshly chopped parsley and serve immediately.

Notes

Do not crowd the baking dish — keep pieces in a single even layer for golden edges. Chicken thighs can be substituted; bake at 400°F for approximately 25 minutes. Store leftovers in an airtight container in the refrigerator for 3 to 4 days or freeze for up to 1 month.
