Method
- Preheat your oven to 400°F.
- Cut the chicken breasts into bite-sized chunks, about 1 to 2 inches each. Keep pieces as uniform as possible for even cooking.
- Place the chicken pieces into a 9x13 inch baking dish. Drizzle the olive oil and chicken base over the top, then toss until every piece is coated.
- Sprinkle all the spices over the chicken and toss again until each piece is well seasoned. Spread into a single even layer without crowding.
- Bake for 15 to 20 minutes, or until the internal temperature reaches 165°F on an instant-read thermometer.
- Remove from the oven and let rest for 5 minutes. Toss with freshly chopped parsley and serve immediately.
Notes
Do not crowd the baking dish — keep pieces in a single even layer for golden edges. Chicken thighs can be substituted; bake at 400°F for approximately 25 minutes. Store leftovers in an airtight container in the refrigerator for 3 to 4 days or freeze for up to 1 month.
