- Preheat your oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish with a drizzle of olive oil.
- In a large mixing bowl, combine the chicken pieces, sliced zucchini, cherry tomatoes, red onion, and minced garlic. Drizzle with olive oil and add all the Mediterranean seasoning. Toss well until every piece is evenly coated.
- Spread the chicken and vegetable mixture in an even single layer in the prepared baking dish. Avoid overcrowding to allow proper roasting.
- Sprinkle shredded mozzarella and grated Parmesan cheese evenly over the top. Cover the dish tightly with aluminum foil.
- Bake covered for 20 minutes. Remove the foil and bake for another 10 to 15 minutes, until the cheese is golden and bubbly and the chicken reaches an internal temperature of 165 degrees F (75 degrees C).
- Remove from the oven and let the dish rest for 5 minutes. Garnish with fresh chopped parsley and serve warm.
Notes
You can assemble this dish up to 24 hours in advance and refrigerate unbaked. Add the cheese topping just before baking. Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze for up to 2 months in a freezer-safe container.
