- Preheat oven to 350 degrees F. Lightly grease a 9x13-inch casserole dish.
- In a large mixing bowl, beat softened cream cheese until smooth. Add sour cream, mayonnaise, garlic powder, salt, and pepper. Stir until fully combined with no lumps.
- Fold in shredded chicken, cheddar cheese, and sliced green onions until evenly combined.
- Spread the mixture evenly into the prepared casserole dish.
- In a separate bowl, combine crushed Ritz crackers and melted butter. Toss until all crumbs are coated. Sprinkle evenly over the casserole.
- Bake uncovered for 25 to 30 minutes until the topping is deep golden brown and the edges are bubbling.
- Remove from oven and rest for 5 to 10 minutes before serving. Garnish with extra green onions if desired.
Notes
Soften cream cheese at room temperature for at least 30 minutes before mixing to avoid lumps. Shred cheese fresh from a block for the smoothest melt. Bake uncovered to keep the cracker topping crispy. Freeze unbaked for up to 2 months; add cracker topping fresh before baking.
